Greetings all and I hope your holiday season is all that you hoped for. Today in keeping with Astraea Sapphire's blog party, we are talking about traditions.
When I think about traditions, the first thing that comes to mind is making Cranberry Bread to kick off the holiday season. My recipe comes from Virginia Hospitality, a cookbook I used very heavily when I lived in Virginia.
Christmas Cranberry Bread
2 cups flour
3/4 cup sugar
1 1/2 teaspoons baking powder
1 teaspoon salt
1/2 teaspoon soda
1/2 cups nuts, chopped
1 cup fresh or frozen cranberries, chopped (I use them whole)
1 egg, beaten
3/4 cup orange juice
2 Tablespoons salad oil
**I add extra cranberries and a bit of orange zest to liven it up a bit.
Preheat oven to 350 degrees. Sift dry ingredients together. Stir in nuts and cranberries. Add remaining ingredients and blend until thoroughly moistened. Bake in greased, floured loaf pan 50 minutes or until golden brown.
** I usually add extra whole cranberries and a few walnut pieces to the top of the loaf to make it more decorative.
